Lukewarm water

2.5 cups

Honey or rock candy (sugar)

Rose water

2 tablespoons

Saffron (dissolved)

Walnuts, hazelnuts, pistachios, almonds

Turmeric

2 tablespoons

Wheat flour

150 grams


Step-by-Step Instructions

  1. First, choose a suitable pot and add the flour. Place it over medium heat.

  2. Roast the flour well, stirring continuously, until the raw smell disappears and it turns light brown.

  3. After roasting, add the melted animal butter and continue stirring for 3–4 minutes.

  4. Remove the pot from heat and gradually add lukewarm water while stirring continuously with a whisk to prevent lumps.

    If lumps form, pass the mixture through a sieve.

  5. Once the mixture reaches a smooth and desired consistency, return it to the heat. Add honey or rock candy and stir until fully dissolved.

  6. When the mixture begins to boil, add rose water, turmeric, and saffron. Continue stirring until bubbles form in the center of the pot.

  7. After bubbles appear, keep stirring for another 2 minutes, then turn off the heat. Cover the pot with a lid and let it rest for about 15 minutes.

  8. After resting, the Kaachi is ready. Garnish with cinnamon powder and ground nuts, then serve to the mother to help restore energy and strength.
