In response to readers' requests, this recipe section is dedicated to a delicious pan-fried ginger bread that requires no yeast and no eggs. Its soft, fluffy texture is exceptional, making it a perfect homemade bread for afternoon tea, iftar, or serving with a warm beverage.

Sweet yogurt | 1⅓ cups |
Sugar | ½ cup |
Ground ginger | 1 teaspoon |
Turmeric | 1 teaspoon |
Oil | ¼ cup |
Baking powder | 1 teaspoon |

Combine 1⅓ cups of sweet yogurt with ½ cup of sugar and stir well until the sugar dissolves.
Add the ground ginger, turmeric, and ¼ cup of oil to the mixture and mix thoroughly.
Sift 2 cups of flour and 1 teaspoon of baking powder over the wet ingredients. Gently mix until a sticky but light dough forms.
There is no need to knead the dough or add extra flour.
Grease a 20 cm (8-inch) frying pan or pot well and pour the dough into it.
Using a lightly oiled spoon, smooth the surface of the dough. Then brush the top with a mixture of saffron and egg yolk.
For decoration, sprinkle sliced almonds, sesame seeds, or black seeds (nigella seeds) over the top.
Cover the pan with a lid wrapped in a kitchen towel (or use a heat diffuser) and cook over low heat on a preheated heat diffuser.

Note: If using a double-sided frying pan, be sure to remove the rubber gasket before cooking the bread.
Once the bread has set and become slightly firm, insert a wooden skewer or toothpick into the center. If it comes out clean, carefully turn the bread over onto a plate and return it to the pan. Cook for a few more minutes until the other side is golden brown.
