According to Saednews, Homemade apricot jam can be prepared just like the delicious, restaurant-style jams served at parties, provided that you follow the cooking instructions carefully and step by step as described in this cooking guide.
One of the most important benefits of apricots is that they are an excellent source of beta-carotene, which is converted into vitamin A in the body and helps support the health of the eyes, skin, hair, mouth, and more. Apricots are a widely used fruit and can be consumed in various forms such as apricot compote, fruit leather (lavashak), dried apricots, and apricot jam, which we will teach you how to prepare below.

Apricots: 1 kg
Sugar: 900 g
Citric acid: 1 teaspoon
Rose water: 1/4 cup
Saffron (dissolved): 1 tablespoon
Step 1: Wash 1 kilogram of apricots, cut them in half, and remove the pits.
Step 2: Arrange a layer of apricots in a suitable pot.
Step 3: Add a layer of sugar over the apricots.
Step 4: Repeat layering apricots and sugar until all ingredients are used.
Step 5: Cover the pot and let it rest in the refrigerator for 12 to 24 hours so the apricots release their juice.
Step 6: Place the pot over medium heat and bring it to a boil.
Step 7: When it starts boiling, foam will form on the surface. Remove the foam using a spoon and set it aside in a separate container.
Step 8: Add rose water to the jam mixture and stir.
Step 9: Add saffron and mix well to enhance both color and aroma.
Step 10: After the jam has boiled slightly, remove the softened apricots from the syrup for a better final appearance.
Step 11: Let the syrup continue cooking until it thickens to the desired consistency. Then add back the foam that was previously collected (which contains some syrup).
Step 12: Once the syrup has thickened properly, return the apricots to the pot.
Step 13: Finally, add citric acid to prevent crystallization and stir well.
Step 14: Allow the jam to cool completely in the pot, then transfer it into storage jars.

This jam can be prepared in two ways. In the second method, sugar is first dissolved in water, then pitted apricots are added along with saffron and cooked together.
For a mashed-style jam, you can skip separating the apricots after cooking and allow them to soften completely in the pot.
You may replace citric acid with lemon juice; however, citric acid helps prevent sugar crystallization more effectively.
Total cooking and preparation time is approximately 20 minutes (excluding resting time).
Apricot jam can be served as a snack or with breakfast and tea.
