New Method for Making Barberry Pickles

According to Saednews, Barberry (zereshk) is a delicious sour fruit widely used in cooking. It can be used to prepare various dishes as well as products such as fruit leather, jam, pickles, marmalade, and barberry juice. One practical way to prevent fruits in the refrigerator from spoiling is to turn them into pickles or jams. Among popular pickles, sour cherry pickle, okra pickle, pomegranate pickle, and barberry pickle are considered especially flavorful and widely enjoyed.


Ingredients for Barberry Pickle

  • Fresh barberries: 2.5 cups

  • Water: 2 cups

  • Sugar: 2 tablespoons

  • Salt: 1 tablespoon

  • Wild celery seed (Golpar): 1 tablespoon

  • White vinegar: 1 cup


How to Make Barberry Pickle

First, place the barberries in a bowl and cover them completely with cold water. Let them sit for about 15 minutes so that dust and impurities are removed. After 15 minutes, drain them using a strainer and let the excess water drain off. Then spread the barberries on a clean cloth and allow them to dry completely. These cleaned barberries are now ready for making pickle.

To prepare barberry juice, place half a cup of barberries in a pot, add two cups of water, and simmer over low heat for about 30 minutes until small bubbles form. Pour the mixture through a strainer and press the barberries with the back of a spoon to extract all the juice. Using fresh barberry juice enhances the flavor and quality of the pickle.

For the final preparation, place the dried barberries in a glass jar. Add sugar, salt, and wild celery seed. Pour in the prepared barberry juice and then add white vinegar. Close the jar tightly and place it upside down at room temperature for 24 hours. After that, store it in the refrigerator. Your barberry pickle will be ready after about three days.

  • Make sure the barberries are completely dry before preparing the pickle to prevent mold.

  • Fresh barberries give better quality, but dried barberries can also be used.

  • Keep the jar at room temperature for the first 24 hours.
