SAEDNEWS: Tomato and Rice Ash (Āsh-e Gojeh Farangi): A Traditional and Delicious Iranian Recipe

Tomato soup (Āsh-e Gojeh Farangi) belongs to the category of traditional Persian soups and is very suitable for autumn and winter seasons. Because of its simple ingredients and quick preparation, it can be an excellent choice for dinner or as a starter alongside main dishes.
Although this soup is prepared in different ways, here is a delicious method for making a tastier version of tomato and rice soup.

Chopped soup herbs (leek, parsley, coriander, spinach): 1 kg
Blended tomatoes: 1 liter
Pinto beans: 1 cup
Dried mint: 100 g
Verjuice (or sour grape juice): 1 cup
Turmeric: 1 tablespoon
Black pepper: 1 teaspoon
Rice (preferably broken rice): 2 cups
Fried onions: 1 cup
Salt: as needed
First, place the beans in a pot with water and cook them until they are fully soft. Then add the rice and let it cook completely.
Peel the tomatoes and blend or puree them using a grater, blender, or food processor. Add the tomato puree to the pot. After a few minutes, foam may form on the surface; this is completely normal.
Once the ingredients are fully cooked, add the chopped herbs. Herbs should always be added at the end so they retain their aroma and do not overcook.
Let the soup simmer until it thickens and is well combined.
Prepare fried onions in advance. Add turmeric and fried onions to the soup. Avoid adding onions too early, as they may lose their flavor during long cooking.
Add dried mint, then finally add salt, pepper, and verjuice. This soup tastes better when it is slightly spicy, so adjust the pepper according to your preference.
After serving, you can top it with extra fried mint if desired.
The choice of legumes is flexible. Pinto beans are traditional, but white beans, wheat, bulgur, lentils, split peas, or red lentils can also be used. The more variety, the richer the flavor.
For faster preparation, soak the beans in advance or partially cook and freeze them.
Some people add meatballs for extra flavor, but this is optional.
If tomatoes are not very red and the soup looks pale, you can dissolve a little tomato paste in water and add it.
Leftover broth from meat or chicken can be added for a richer taste.
Ready-made meat or chicken stock can also be used, but in that case reduce or omit salt.
