Elegant Meat Kateh Recipe

According to Saednews, Katteh rice is a type of Persian rice that is cooked in a simmering method and served with stews or various kebabs. It is usually prepared with Iranian rice, and this cooking method preserves all the nutrients and flavor of the rice. Today we are going to teach you how to prepare Katteh with meat.

Ingredients for Katteh Meat Rice

  • 400 g lamb meat

  • 2 carrots

  • 100 g barberries (zereshk)

  • 2 tomatoes

  • 2 onions

  • 2 cloves garlic

  • 3 cups rice

  • 1 tablespoon sugar

  • Saffron, as needed

  • Salt, black pepper, paprika, cumin, cinnamon, coriander powder, cinnamon stick, garlic powder, onion powder, as needed

Instructions

First, peel and finely dice one onion. Sauté it in a pot or pressure cooker until soft. Add the meat, two whole garlic cloves, and some saffron, and fry until the meat changes color. Then add black pepper, coriander powder, and other spices. Pour in some warm water and let the meat cook.

Next, prepare the barberry sauce. Soak the barberries in advance, then sauté them in a little butter. Take about three-quarters of the barberries and blend them into a puree using a food processor or hand blender. Keep the rest aside.

Peel and finely chop the remaining onion and sauté it until soft. Chop the tomatoes, puree them, and add them to the onion along with some saffron. Cook until the tomato water reduces.

Add the barberry sauce to the tomato mixture. If you used stewing meat or lamb neck, remove the bones after cooking and add the meat to the sauce mixture. Pour in some of the meat broth and mix well.

Grate the carrots and add them to the pot. Let everything cook for about 15 minutes until the sauce thickens. Adjust salt to taste.

Soak the rice in advance, then boil it and drain it. Place sliced potatoes or bread at the bottom of the pot as a crust (tahdig). Add a layer of rice, then the meat mixture, and finally the remaining rice on top. Steam for about 30 minutes.
