SAEDNEWS: Chicken and mushroom rice is a very delicious and nutritious mixed rice dish made from a combination of rice with chicken, mushrooms, and other ingredients.

Chicken and Mushroom Rice is a nutritious and aromatic mixed rice dish made by combining chicken, mushrooms, and rice. It has a rich flavor and is both satisfying and wholesome. Below is a simple way to prepare it at home.

Rice: 3 cups
Chicken fillet: 4 pieces
Mushrooms: 250 g
Onion: 1 large
Thick saffron infusion: as needed
Lemon juice: 2 tbsp
Barberries: ½ cup
Salt, black pepper, thyme, paprika: as needed
Oil: as needed
Finely dice the onion and sauté it in oil until golden. Add the sliced chicken fillets and season with salt, turmeric, black pepper, thyme, and paprika. Stir and sauté for about 5 minutes until the chicken starts to cook.
Add sliced mushrooms and lemon juice. Sauté for about 10 minutes. Then reduce the heat, cover the pan, and allow the chicken and mushrooms to cook through gently. Add washed barberries and a little saffron infusion, then turn off the heat.
Cook the rice until it is slightly underdone (parboiled). Prepare your pot with a desired crust (tahdig). Layer rice and the chicken-mushroom mixture alternately in the pot, creating about three layers. Finish by pouring saffron over the top. Cover and steam for about 45 minutes.
Before serving, gently mix the rice to distribute the ingredients evenly.
Rice cooking technique: Soak rice in salted warm water for several hours (ideally 3 hours or overnight). Boil in plenty of salted water until the grains are soft on the outside but still firm inside. Drain and rinse with cold water to stop cooking and remove excess salt.
Mushroom quality: Fresh mushrooms should feel firm and slightly heavy. Avoid overly light or cracked ones.
Saffron use: Use a strong saffron infusion for better color and aroma. Grinding saffron and blooming it with hot water and a small ice cube helps release more color.
Barberries: Add them at the end of cooking to preserve their flavor and prevent burning.
