SAEDNEWS: Kurds have a famous dish called Aash-e Mast, served at most gatherings. It is especially common at weddings and parties. The soup is light, delicious, and well-balanced.
According to Saednews cooking service, this video shows how to prepare Kurdish-style Ash-e Mast.
Lentils: 2 cups
Split rice: 2 cups
Cooked chickpeas: 1 cup
Soup herbs (parsley, cilantro, spinach, dill, mint): 1 kg
Yogurt: 500 g
Garlic (grated): 3 cloves
Onion: 1
Salt, black pepper, turmeric: as needed
Stock or broth (lamb stock or chicken stock) or water
Soak the chickpeas overnight, then cook them carefully so they don’t become too soft or mushy.
Soak the lentils for about 2 hours before cooking.
Finely chop the onion and sauté it in a little oil.
Add the ingredients as shown in the recipe/video.
Pour in stock (or broth) and some hot water, then let it simmer. The soup should not become watery.
Add salt, black pepper, and turmeric. (Optional: add hot green chili pepper for extra spice.)
