Ground meat: 500 g
Tomato paste: 1 tablespoon
Mushrooms: 100 g
Chopped parsley: as needed
Egg yolks: 3
Butter: 100 g
Olive oil: 100 g
Breadcrumbs: 4 tablespoons
White flour: 4 tablespoons
Potatoes: 1 kg
Saffron: as needed
Salt, black pepper, turmeric: as needed
Heat some oil in a pan and sauté the ground meat (or shredded chicken), chopped mushrooms, parsley, and any optional ingredients such as sausage, cold cuts, Parmesan cheese, or chicken.
At the end, add a little tomato paste and brewed saffron.
Boil the potatoes, peel them, and mash them completely into a smooth purée.
Add butter to the mixture and lightly sauté the mashed potatoes over low heat.
Then add the spices and continue cooking until their aroma is released.
Finally, add the egg yolks and mix well.
Take small portions of the mixture, shape them into balls, and create a small hollow in each one.
Fill the center with some of the prepared filling, close them again into round shapes, coat them in breadcrumbs, and fry them in very hot oil until golden and crispy.

Breadcrumbs: 1/3 cup
Eggs: 2
Garlic powder: 1 teaspoon
Onion powder: 1 teaspoon
Salt, oregano, dried mint, black pepper: as needed

Mix the ground chicken with garlic powder and onion powder and knead well until it becomes soft and smooth.
Add oregano, dried mint, black pepper, and salt, and continue kneading until fully combined.
Take a portion about the size of a walnut, place a piece of mozzarella cheese in the center, and shape it into a ball.
Beat the eggs in a separate bowl and season with salt and pepper.
Place breadcrumbs in another bowl.
Dip each meatball first in egg, then coat it in breadcrumbs. For a thicker crust, you may repeat this step twice.
