  2. Heat the milk in a saucepan. Before it starts boiling, add the shredded coconut and honey. Stir continuously until the mixture slightly thickens, then remove from heat and let it cool slightly.

  3. In a mixing bowl, beat the eggs, sugar, and vanilla using a high-speed mixer for several minutes until the mixture becomes light, creamy, and fluffy.

  4. Add the warm coconut milk mixture to the egg mixture and mix well.

  5. Pour in the vegetable oil and mix for a few more seconds.

  6. Switch the mixer to low speed and gradually add the dry ingredients. Mix only until no flour lumps remain.

  7. Pour the batter into a greased cake pan lined with parchment paper.

  8. Bake in a preheated oven at 160–180°C (320–356°F) for 30–45 minutes, depending on your oven.

  9. Check doneness by inserting a toothpick into the center—if it comes out clean, the cake is ready.
