According to a report from the Saed News Family Magazine service, Loobia Polo without meat is one of the most delicious and traditional Iranian dishes. It is very popular and can be prepared in different ways using a variety of ingredients. This tasty meal is widely loved and can be made quickly and easily.
Rice: 4 cups
Green beans: 4 cups
Carrots (medium): 2
Onions (chopped): 2
Garlic: 2 large cloves
Turmeric and cinnamon: 1 teaspoon
Tomato paste: 4 tablespoons
Saffron: as needed
Vegetable oil: as needed
Salt and pepper: as needed

First, sauté the grated onions in a pan with a little oil until golden.
Add the chopped green beans and fry them for a few minutes until their raw taste is removed.
Next, add the spices and dissolved saffron, and sauté everything together for about 8–10 minutes.
Then add the tomato purée to the pan and let it come to a gentle boil.
Cover the pan and let it cook on low heat for about 2 hours. In the last 15 minutes of cooking, add tomato paste and a bit more saffron to enhance the color and flavor of the sauce.
Wash the rice thoroughly and soak it in salted water for about 2 hours. Boil it for about 5 minutes until partially cooked, then drain it.
Now for the final step: place your desired tahdig (crispy rice crust) at the bottom of the pot, then layer the rice and green bean mixture alternately.
Finally, add a little butter on top and let it steam for about one hour.
After about an hour (or even less), your delicious Loobia Polo is ready to serve. Enjoy your meal!
