After washing, place them in a colander and allow them to dry completely. Any remaining moisture can prolong drying time and increase the risk of mold formation.

Slice the tomatoes evenly into thin rounds using a sharp knife or slicer (such as a mandoline). The ideal thickness is 3 to 5 mm. Uniform slicing is important so they dry evenly; otherwise, thinner slices may burn while thicker ones remain moist.
Line a large baking tray with parchment paper to prevent sticking. Arrange the tomato slices with some space between them.
Sprinkle a small amount of salt over the slices. Salt enhances flavor and helps draw out moisture more quickly.
