Below is a complete, step-by-step guide to making homemade sausage.
Beef or chicken: 600 g
Soybeans: ½ cup
Garlic: 3 cloves
Milk powder: 15 g
White flour: 180 g
Egg: 1
Ketchup: 1 tablespoon
Vegetable oil: 50 g
Smoke essence: 2 drops
Ice water: 100 g
Sausage casing: 2 meters
Black pepper: 1 teaspoon
Red pepper: 1 teaspoon
Turmeric: ½ teaspoon
Thyme: ½ teaspoon
Cardamom: ½ teaspoon
Clove: ½ teaspoon
Nutmeg: ½ teaspoon
Coriander powder: ½ teaspoon
Ginger powder: ½ teaspoon
Onion powder: 1 teaspoon
Garlic powder: 1 teaspoon
Cinnamon: ¼ teaspoon

To make sausage, semi-frozen meat is required. If you are using fresh chicken or beef, place it in the freezer until partially frozen, then cut it into smaller pieces using a sharp knife.
Place the semi-frozen meat along with soybeans, milk powder, white flour, ice water, egg, vegetable oil, ketchup, garlic, and smoke essence into a blender. Mix well until a smooth dough forms. Now prepare the spices.
All spices must be in powdered form. Mix black pepper, red pepper, turmeric, thyme, cardamom, clove, nutmeg, coriander, ginger, onion powder, garlic powder, and cinnamon together.
Sift all the spices through a fine sieve to ensure a smooth and even mixture. Then add the spice mix to the blender and pulse a few times so the spices are fully absorbed into the sausage mixture.
Once the sausage dough is formed in the blender, remove it and knead it by hand for about 30 minutes until fully cohesive. The sausage mixture is now ready for stuffing and cooking.
If your meat grinder has a sausage attachment, install it and fill it with the mixture. Place the casing on the nozzle so it fills properly. If you don’t have a sausage stuffer, use a piping bag instead.
Insert the tip of the piping bag into the casing and fill it. Once filled, divide the sausage into desired lengths by tying both ends tightly with string.

Make sure no air enters the casing. While filling with a piping bag, press the mixture gently and tie each section tightly before moving to the next.
Cook the prepared sausages in a steam oven for about 45 minutes. If you don’t have one, place them in a metal tray inside a larger pot with boiling water and cover it so the steam cooks the sausages.
After cooking, rinse the sausages under cold water to cool them down. Then refrigerate for 24 hours to rest. After that, your homemade sausages are ready to use in various dishes.
Since homemade sausages contain no preservatives, they should be consumed as soon as possible. However, if stored properly in an airtight container in the refrigerator, they can last up to one week.
