According to Saednews, Adas Polo is a traditional and much-loved Persian dish made with lentils, Iranian rice, caramelized onions, ground meat, and fragrant herbs. This flavorful rice dish is prepared in different ways across Iran. Some versions include ground meat shaped into small meatballs, while others are completely vegetarian.
For a festive-style Adas Polo, you will need:
4 cups Iranian rice
2 cups lentils
300 g ground beef or lamb
2 onions
2–3 tablespoons dried aromatic herbs
2½ tablespoons breadcrumbs
Oil, as needed
Spices and saffron, as needed

First, sort and wash the lentils and rice separately. Soak both in water for 1–2 hours.
For a more traditional and fluffy result, Iranian Tarom rice, particularly second-crop rice, is an excellent choice because of its cooking quality and ability to become long and fluffy after steaming.
While the rice and lentils are soaking, season the ground meat with one grated onion and your preferred spices.
Add the dried aromatic herbs, such as basil and parsley, along with the breadcrumbs. Mix everything thoroughly.
Shape the mixture into small walnut-sized meatballs and fry them in oil until golden brown. Set them aside.
After soaking, place the rice in a pot with plenty of water and salt. Boil for about 10 minutes, then drain.
The rice should be partially cooked: the center should no longer be completely raw or hard, but the grains should still be firm. This helps the rice become light, fluffy, and elongated during the steaming process.
Slice the remaining onion into thin strips and sauté it in a little oil.
Add the lentils and spices, then gently sauté everything together over low heat for a few minutes. Remove from the heat and set aside.
Choose a suitably sized pot, grease the bottom, and place it over the stove.
Add your preferred tahdig, such as bread, sliced potatoes, or yogurt.
Layer the partially cooked rice with the onion-and-lentil mixture until all the ingredients are used.
Cover the pot and steam over low heat for approximately 40 minutes.
Once the rice has finished steaming, transfer it to a serving platter and garnish with the fried meatballs.
Your Adas Polo is now ready to serve. It can be enjoyed with yogurt, Shirazi salad, or Persian pickles.

Vegetarian option: If you are vegetarian, simply leave out the meat. Thanks to the lentils, the dish remains filling and nutritious.
Mixing the meatballs with the rice: After frying the meatballs, you can combine them with the onions and lentils and layer the mixture between the rice.
Don't skip the onions and herbs: The amount of onion and aromatic herbs plays an important role in creating the dish's distinctive fragrance and flavor.
No separate lentil cooking required: Unlike many other legumes, the lentils do not need to be fully cooked separately. They can soften and finish cooking from the steam while the rice is being prepared.
