Ingredients

  • 1 small bunch of spinach

  • 2 medium potatoes

  • 1 onion

  • 5 tablespoons wheat flour

  • 3 eggs

  • 2 cups milk

  • 1 small bowl shredded pizza cheese or low-moisture mozzarella

  • Salt, turmeric, garlic powder, black pepper, thyme, and baking powder: a pinch of each

  • Oil, as needed for frying

How to Make Spinach and Potato Frittata

  1. Peel the potatoes and cut them into small cubes.

  2. Heat some oil in a pan and fry the potatoes until lightly golden. Set them aside.

  3. Wash the spinach and chop it finely.

  4. Peel and finely dice the onion. Sauté it in a little oil until soft and translucent.

  5. Add the chopped spinach and sauté it with the onion until the spinach becomes tender and most of its moisture evaporates.

  6. Season with a little salt and turmeric, then remove from the heat.

  7. In a suitable bowl, crack the eggs. Add the wheat flour, milk, salt, pepper, garlic powder, thyme, and baking powder. Whisk thoroughly until the mixture is smooth and well combined.

  8. Heat a large nonstick skillet over medium heat and add a little oil.

  9. Pour half of the batter into the hot skillet.

  10. Allow the bottom to set, then carefully turn it over.

  11. Spread the fried potatoes and sautéed spinach-and-onion mixture evenly over the surface.

  12. Sprinkle the shredded cheese over the filling.

  13. Pour the remaining batter over the top, covering the filling.

  14. Cover the skillet and cook until the cheese has melted.

  15. After about 5 minutes, carefully flip the frittata using a large plate or tray so the other side can brown and cook thoroughly.

  16. Once both sides are cooked and golden, the spinach and potato frittata is ready to serve. Enjoy!

Important Tips

When washing spinach, keep in mind that it may contain fine grit and sand. Soak the spinach in lukewarm water for a few minutes to allow the sediment to settle at the bottom. Then gradually remove the spinach from the top and rinse it under cold water. This helps prevent the settled grit from sticking back onto the leaves.

Avoid washing spinach after chopping it, as this can cause some of its nutrients to be lost. Prepare only as much spinach as you need, and avoid storing it after it has been cooked.

When buying spinach, choose fresh, tender leaves. Large, dark leaves are less suitable for this dish. For the best texture, cut the spinach into pieces about 4 centimeters in size. If chopped too finely, it can become mushy and lose its appearance.

Pizza cheese is generally a type of low-moisture mozzarella and may sometimes be blended with other cheeses. It provides nutrients such as protein, calcium, phosphorus, potassium, sodium, and several vitamins.

Combining pizza cheese with raw or cooked vegetables may help balance the overall richness of the dish.

A good-quality pizza cheese should melt smoothly rather than becoming rubbery or overly chewy.

Quality cheese should also avoid releasing excessive amounts of oil after cooking.

For a richer flavor, you can combine two or three types of melting cheese in the recipe.
