They are very similar to Iranian samosas, and the dough can easily be prepared with just flour, water, and salt. These crispy, spicy samosas are especially delicious for anyone who enjoys hot, flavorful, fast-food-style dishes.

Ingredients for the Samosa Dough

  • 4 cups flour

  • 1 cup water

  • 1 teaspoon salt

  • 1 teaspoon ground cumin

  • 1 teaspoon nigella seeds

  • ½ cup vegetable oil

Ingredients for the Samosa Filling

  • 5 medium potatoes

  • 200 g ground beef

  • 2 garlic cloves

  • 1 small piece of fresh ginger

  • 1 large onion

  • 1 hot chili pepper

  • 1 cup fresh cilantro, chopped

  • 2 tablespoons fresh lemon juice

  • Salt, as needed

  • Turmeric, as needed

  • Black pepper, as needed

  • Red pepper, as needed

  • Onion powder, as needed

How to Make the Samosa Dough

Step 1

To prepare the samosas, begin by making the dough. Sift the flour twice to remove any lumps and make it lighter.

Add the salt, ground cumin, and nigella seeds to the flour and mix the dry ingredients well. Then add the vegetable oil and mix until the oil is evenly absorbed into the flour.

Finally, add the water and knead the dough thoroughly by hand. After about 5 minutes of kneading, you should have a smooth, soft, and cohesive dough.

Place the dough in a lightly greased bowl, cover it with plastic wrap, and leave it in a warm place for about 30 minutes.

Preparing the Filling

While the dough is resting, prepare the samosa filling.

Wash the potatoes and place them, with their skins on, in a pot with enough water and a little salt. Cook over high heat until the potatoes are completely tender.

Peel the onion, wash it, and finely chop it. Peel and grate the garlic. Peel and finely grate the ginger as well.

Finely chop the hot chili pepper and set everything aside.

Place a suitable frying pan over medium heat and add a little oil. Once the oil is hot, add the chopped onion and sauté until it becomes soft and translucent.

Add the grated garlic and ginger and sauté for another minute.

Add the ground beef and chopped chili pepper to the pan. Stir and cook until the beef changes color and is thoroughly browned.

Season with salt, black pepper, red pepper, onion powder, and turmeric.

Once the ingredients are well combined, add about half a cup of hot water to the meat mixture. Cover the pan and allow it to cook until the meat is completely done and the excess liquid has evaporated.

Meanwhile, peel the cooked potatoes and mash them until smooth.

Once the liquid from the meat has evaporated, add the mashed potatoes and fresh lemon juice to the pan. Stir and sauté until all the ingredients are thoroughly combined.

Turn off the heat and immediately add the chopped cilantro. Mix well so the cilantro is evenly incorporated into the filling.

Filling and Shaping the Samosas

Allow the filling to cool slightly. Meanwhile, transfer the dough to a work surface and knead it briefly.

Divide the dough into pieces about the size of a small tangerine. Roll each piece out with a rolling pin until it is approximately ½ cm thick.

Place a portion of the potato and ground beef filling in the center of the dough. Fold the dough over the filling and shape it into a neat triangle, sealing the edges firmly.

Frying the Samosas

Once all the samosas have been assembled, place a deep frying pan over medium heat and add enough oil to completely submerge the samosas while frying.

Fry the samosas in batches until they become crisp and golden brown.

Transfer the fried samosas to a plate lined with paper towels to absorb the excess oil.

Serve hot with your favorite dipping sauce. Spicy chili sauce or ketchup are both excellent choices.
