  • 2 cups Cornelian cherries

  • 3 tablespoons salt

  • Vinegar, as needed

  • Ground hogweed (golpar), as needed

How to Make Red Cornelian Cherry Pickles

Remove the stems from the Cornelian cherries, wash them thoroughly, and allow them to dry completely.

Fill a clean glass jar with the Cornelian cherries. Sprinkle the salt over them and add a few pieces of golpar (Persian hogweed).

Pour in enough vinegar to completely cover the fruit and fill the jar to the top.

To remove any trapped air, seal the jar tightly and place it in a pot of boiling water for about 20 minutes. The water only needs to reach halfway up the sides of the jar.

Afterward, turn the jar upside down and leave it on a flat surface for 24 hours to ensure it is properly sealed and air-free.

The pickles will need about 2 to 4 weeks to fully mature and develop their flavor.

For best results, you can prick the Cornelian cherries with a needle before pickling to help prevent them from splitting during the pickling process.

If desired, you may also add some coriander seeds along with the golpar for extra flavor.
