Rice: 3 cups
Sour cherries (pitted): 6 cups
(2 cups of sour cherries for every 1 cup of rice)
Chicken thighs: 3 pieces
Onions: 2
Sugar and oil: as needed
Brewed saffron: enough for flavor and color
Salt, black pepper, mango powder: ½ teaspoon
Tandoori spice: ¾ teaspoon
Bay leaves: 2
Fresh rosemary: 1 sprig

First, slice the onions and sauté them for about 3 minutes until they become soft and lightly golden.
Add the chicken pieces to the pan.
While the heat is high, add salt, black pepper, mango powder, tandoori spice, and saffron. Sauté each side of the chicken for about 5 minutes.
Then add a small amount of boiling water along with the bay leaves and rosemary sprig.
Reduce the heat and allow the chicken to cook slowly, absorbing the aroma of the spices and herbs until it becomes tender and fully cooked.
Remove the pits from the sour cherries.
Place them in a pan over low heat with a little sugar and oil. Let them simmer for about 10 minutes until they soften slightly and develop a rich flavor.
Soak the rice beforehand with salt, then boil it in water for about 7 minutes and drain.
Gently mix the cooked sour cherries with the drained rice, or arrange them in layers inside the pot.
Allow the sour cherry rice to steam over low heat for about 1 hour until the flavors blend together.
Finally, serve the colorful and aromatic Albaloo Polo on a platter and place the saffron chicken pieces beside it.
The combination of the sweet-and-sour flavor of cherries with the fragrance of rosemary and tandoori spices creates a memorable Persian culinary experience.
