SAEDNEWS: Preparing potato dampokht is a very easy process, and you can make this traditional Persian dish by following a few simple steps. This flavorful meal combines rice, potatoes, and aromatic spices to create a comforting and satisfying dish that is popular in Iranian cuisine.
According to Saednews, Simple potato rice (Dampokhtak-e Sibzamini) is one of the most traditional, affordable, and popular Iranian dishes. It is prepared with easily available ingredients and cooked using the traditional one-pot rice method known as kateh.
2 cups of rice
1 large potato
1 medium onion
Enough cooking oil
Enough salt
Enough turmeric
1 medium tomato
1 tablespoon tomato paste

First, prepare the onion. Wash and peel the onion, then finely chop it into small cubes. Add the chopped onion to a medium-sized pot with some oil and sauté until it becomes soft, translucent, and lightly golden.
While the onion is cooking, grate the tomatoes and cut the potatoes into small cubes.
Once the onion has softened, add the grated tomatoes along with the spices to the pot. This dish is usually more flavorful when prepared with a generous amount of turmeric. Stir and sauté the ingredients well until the tomato juice evaporates and the mixture becomes thick and sauce-like.
Next, add the tomato paste and sauté it until its color becomes richer and it releases its aroma.

Meanwhile, clean and wash the rice. It is recommended to soak the rice in water with a little salt for about 30 minutes to 1 hour before cooking. This helps soften the grains and allows them to expand better during cooking.
After the onion, tomato, and tomato paste mixture is ready, add the washed rice, chopped potatoes, and enough water to the pot. Increase the heat until the water starts boiling.
Then reduce the heat and allow the rice to cook slowly. Let the Dampokhtak simmer for approximately 50 minutes to 1 hour until the rice is fully cooked and has absorbed the flavors.
At the end, you can transfer the Dampokhtak onto a serving dish in a molded shape and serve it with different types of Iranian pickles and side dishes, such as eggplant pickle (Torshi Liteh with grilled eggplant) or Torshi Haft Bijar.
