White figs: 400 g
Sugar: 350 g
Water: 3 cups
Green cardamom pods: 4
Lemon juice: 1 teaspoon

Place the water and sugar in an enamel pot and heat until it comes to a boil.
Wash the figs, then add them to the boiling syrup so they cook and the jam syrup thickens.
When the syrup becomes thick, add the cardamom and lemon juice and gently mix. After five minutes, turn off the heat and allow the jam to cool in the pot.
You can then transfer the jam into a suitable container or glass jar and store it in the refrigerator.
It is better to use figs that are ripe but still firm. The figs should not be mushy.
You can replace cardamom with one tablespoon of rose water.
If the figs are slightly unripe, add an extra 50 grams of sugar.
