How to Make Melon Ice Cream at Home

Step-by-step Instructions

  1. Prepare the melon
    Cut the melon into medium-sized cubes and place them in a blender. Blend once until slightly crushed.

  2. Add sugar
    Add half of the sugar to the blender and mix again until the melon becomes a smooth green purée.

  3. Cook the purée
    Pour the melon purée into a non-stick pot and heat it over low heat. Stir continuously until it thickens.
    Remove from heat and let it cool completely.

  4. Beat eggs and sugar
    In a separate bowl, crack the egg and add the remaining sugar. Beat with an electric mixer until foamy and light.

  5. Add flavoring
    Add salt and vanilla sugar to the egg mixture and continue mixing until it becomes creamy, pale, and doubled in volume.

  6. Add malt drink
    Slowly pour in the unflavored malt drink while mixing until fully combined.

  7. Whip the cream
    In another bowl, whip the cream until it becomes firm and fully set. Then fold it into the egg mixture.

  8. Combine with melon purée
    Once the melon mixture is completely cool, add it to the rest of the ingredients. Mix on low speed until smooth and uniform.


Freezing Process

  1. Pour the mixture into a suitable container and place it in the freezer.

  2. After 2–3 hours, remove it and beat it with a mixer to keep it smooth.

  3. Return it to the freezer and repeat this process 4 times (every 2–3 hours).

  4. After that, freeze it for about 24 hours until fully set.


Serving

Remove the ice cream from the freezer, let it soften slightly, and scoop it into bowls. Shape into round scoops and serve.

You can also place some chopped melon at the bottom of the serving cup before adding the ice cream.


Tips for Better Melon Ice Cream

  • You can use either green or orange melon (talebi).

  • If the melon is very sweet, reduce the sugar.

  • Garnish with chopped pistachios or walnuts for extra flavor.

  • Make sure the mixture doesn’t fully freeze into ice crystals; it should stay creamy. Stirring during freezing helps prevent this.
