SAEDNEWS: How to Make Chicken Qawarma with Chicken: A Traditional Kurdish Dish Served with Bread and Rice
According to Saednews, Chicken Qawarma is a traditional and beloved dish in parts of western Iran, especially in Kurdistan. Despite its simple ingredients, it has a unique and memorable taste.
In this cooking method, chicken pieces are slowly cooked with onions and spices until their natural juices are fully released and reduced. The meat is then sautéed in its own fat until it becomes rich, aromatic, and deeply flavorful. The final result is a beautifully colored and delicious dish that can be served with rice or bread. If you are looking for a traditional meal with a distinctive taste, Chicken Qawarma is an excellent choice.
700–800 g chicken pieces
2 medium onions
1 teaspoon turmeric
½ teaspoon curry powder
½ teaspoon black pepper
Salt, as needed
Oil, as required
Cut the chicken into small, even pieces. For a softer texture and better flavor, you may soak the chicken in salted water for a few hours. Then drain it and allow excess moisture to evaporate.
Chop the onions roughly. Place the chicken in a bowl and add the chopped onions along with salt, black pepper, turmeric, and curry powder. Mix well so all pieces are evenly coated with the spices.
Choose a wide pan so the chicken pieces are not stacked on top of each other. Add some oil and heat it. Then add the chicken and onion mixture. Stir for a few minutes, then cover the pan with a lid.
Reduce the heat to medium. The chicken should cook slowly so it releases its natural juices, which will gradually evaporate. This stage takes about 30 minutes. Stir occasionally to ensure even cooking.
Once the liquid has evaporated and the oil separates, remove the lid and let the chicken fry in its own oil for another 15–20 minutes. This step gives the meat a golden color and a deeper, richer flavor.

Using chicken thighs makes the dish juicier and more flavorful.
Turmeric is essential for both color and taste.
Too high heat can burn the chicken, while very low heat may cause excessive water release.
Use a pan large enough for even cooking.
The remaining oil at the end can be served with rice for extra flavor.
Chicken is a rich source of high-quality protein. Combined with spices like turmeric, this dish becomes a nutritious option for lunch or dinner. It also requires fewer ingredients compared to many traditional stews, making it relatively quick to prepare.
