200 g scallions (washed and finely chopped)
3 eggs
1 tablespoon all-purpose flour
2–3 garlic cloves (grated or crushed)
4–5 walnuts (optional, finely chopped)
½ teaspoon turmeric
Salt, to taste
Black pepper, to taste
Cooking oil, as needed
Barberries (optional, for garnish or flavor)

Wash 200 grams of cleaned scallions and, once the water has drained, finely chop them on a cutting board using a sharp knife. Add one tablespoon of all-purpose flour to the scallions. Shell 4–5 walnuts and chop them finely with a knife. Then add the walnuts to the scallion and flour mixture and combine well.
In a separate bowl, crack three eggs. Grate and crush 2–3 garlic cloves and add them to the eggs. Add some salt, half a teaspoon of turmeric, and some black pepper, then mix well until completely uniform.
Pour oil into your pan and place it over medium heat until fully hot. Once the oil is hot, combine the egg mixture with the scallions and stir well. Then pour the mixture into the pan and smooth the surface.
For the first 3–4 minutes, keep the heat at medium-high so the edges of the frittata set properly. Then cover the pan and let it cook on low heat until fully cooked through. After about 15 minutes, when one side is fully fried, flip it over and cook the other side for about 4 minutes until browned and cooked.
