Ingredients

  • Eggplant: 2

  • Chicken breast: 1

  • Onion: 1

  • Medium potatoes: 2

  • Oil for frying: as needed

Ingredients for the sauce

  • Thick yogurt or Greek yogurt: 300 g

  • Chopped walnuts: 100 g

  • Fresh dill: 1 small bunch

  • Salt, turmeric, red pepper or chili flakes: as needed


Instructions

Step 1: To prepare this delicious dip, first peel the eggplants and slice them. Place the eggplants in a saltwater solution to remove bitterness, then drain them. After the eggplants are dry, fry them in oil and set them aside to drain excess oil.

Step 2: Peel the potatoes and cut them into cubes. You can season the chopped potatoes and roast them in an air fryer, or fry them in oil and set them aside.

Step 3: Finely chop the onion and add it to a pan with a little oil. Let the onion become soft and golden. Meanwhile, cut the chicken breast into cubes and add it to the pan once the onion is fried. Add salt and turmeric to the chicken, then cover the pan and let the chicken cook over low heat until tender.

Step 4: Pour the yogurt into a large bowl, then add dill and chopped walnuts. Next, chop the fried eggplants into cubes and add them to the bowl. Add the cooked chicken as well. Finally, add a little salt and red pepper or chili flakes, and mix everything well so that the flavors combine completely. Place the dip in the refrigerator for 1–2 hours to chill and set. Important Notes

  • When buying eggplants, try to choose early-season eggplants, because second and third harvest eggplants are usually full of seeds and bitter. Also, choose shiny, elongated, and heavy eggplants. Make sure the eggplant is not bruised. The longer the calyx (top stem), the sweeter the eggplant usually is. Even if you follow all these tips, the eggplant may still be bitter.

  • To remove bitterness from eggplant: peel the eggplants but keep the top stem so they do not fall apart. Wash them thoroughly, then place them in saltwater that is slightly saltier than usual for 15 to 30 minutes. After removing them from the saltwater, squeeze them with your hands to remove excess salt and water. There is no need to wash them again. This method removes bitterness and also helps the eggplant absorb less oil during frying.
