Ingredients for Potato Börek

  • Garlic powder: 1 teaspoon

  • Egg (yolk): 1

  • Cream cheese: 100 g

  • Onion: 1

  • Potatoes (medium): 2

  • Phyllo dough: as needed

  • Saffron (dissolved): 1 teaspoon

  • Thyme: as needed

  • Olive oil: as needed

  • Pizza cheese: as needed

  • Salt: as needed


How to Make Potato Börek

First, grate the onion and cook it in a pan until its excess water evaporates completely, then fry it in a little oil. Boil the potatoes, grate them, and add them to the onions and sauté together.

Add garlic powder, some thyme, salt, pepper, saffron, and cream cheese. Mix well and remove from heat.

Roll out some phyllo dough and cut it into shapes (using any round cutter, such as a small plate). Brush the dough with egg yolk, add some of the filling, sprinkle with pizza cheese and thyme, and fold into the desired shape.

Grease a baking tray and place the prepared pastries on it. Bake in a preheated oven at 180°C (356°F) for 20–30 minutes.

How to Make Potato Börek (Second Method)

Wash and peel the potatoes, then place them in a pot. Add enough water to cover halfway, along with a little salt and oil. Boil for about 30 minutes until soft, then drain.

Mash the potatoes using a food processor or masher. Add cheeses, parsley, and spices, and mix well until the filling is ready.

To prepare the coating mixture, combine all the listed ingredients in a bowl (except sesame or black seeds).

Lay one or two sheets of yufka dough on a flat surface and lightly brush with the coating mixture. Do not soak the dough—just make it slightly moist.

Place another layer of dough on top, then add about one tablespoon of the potato filling. Fold into small parcels and seal the edges with butter to prevent them from opening.

Brush the prepared pastries with the coating mixture and sprinkle sesame or black seeds on top.

Bake in a preheated oven at 150–200°C (302–392°F) for 20–30 minutes, or alternatively, fry them in a lightly oiled pan over the stove.
