SAEDNEWS: Pistachio cookies are delicious and aromatic treats made at home with ground and chopped pistachios, milk chocolate, and a few simple ingredients.
According to Saednews, Pistachio cookies are a type of dry, crisp cookie made with pistachios in two forms: finely ground and roughly chopped. One reason these cookies are so popular is how flexible the recipe is. You can slightly reduce the amount of sugar, use brown sugar for a deeper caramel-like flavor, or replace milk chocolate with dark chocolate. Pistachios are also naturally nutritious, giving the cookies some nutritional value. However, these are still sweet treats, so they are best enjoyed in moderation.
The original recipe lists 900 grams of butter. This amount does not correspond well with the other ingredients and is most likely a typographical error. Using 900 grams of butter with just one cup of flour and one egg would produce an extremely soft, unusable dough. The recipe below uses the more reasonable amount of 90 grams of butter. If you intend to follow the original quantities, make sure to adjust the other ingredients proportionally.
90 g softened butter
½ cup granulated sugar
1½ tablespoons brown sugar
1 egg
1 cup all-purpose flour
1 tablespoon cornstarch
½ teaspoon baking powder
A pinch of salt
½ cup finely ground pistachios
½ cup chopped pistachios
100 g milk chocolate, chopped
½ teaspoon vanilla extract, optional

Preheat the oven to 170°C (340°F). Line a baking tray with parchment paper. If you do not have parchment paper, lightly grease the tray and dust it with a little flour.
Measure all the ingredients beforehand so the preparation process is easier and more consistent.
Place the softened butter, granulated sugar, and brown sugar in a large bowl. Beat with a hand mixer or electric mixer for about 2–3 minutes, until the mixture becomes light and creamy.
This step is important for achieving the right texture in the finished cookies.
Gradually add the egg to the butter and sugar mixture and mix until combined. If using vanilla extract, add it at this stage.
Mix just until the ingredients are incorporated. Avoid overmixing, as this can make the cookies too firm.

In a separate bowl, combine and sift the flour, cornstarch, baking powder, and salt.
Add the dry ingredients to the wet mixture in two or three batches. Gently fold everything together with a wooden spoon or spatula until a uniform dough forms.
Do not overmix the dough, as excessive mixing can result in tougher cookies.
Add the ground pistachios, chopped pistachios, and chopped milk chocolate to the dough.
Gently fold them in with a spatula until the pistachios and chocolate are evenly distributed throughout the dough.
Place the cookie dough in a covered container and refrigerate for at least 30 minutes.
Chilling helps firm up the dough, allows the flavors to develop, and prevents the cookies from spreading too much during baking. If you have enough time, chilling the dough for 1–2 hours is even better.
Take a portion of dough about the size of a medium walnut and roll it into a ball.
Arrange the dough balls on the prepared baking tray, leaving approximately 5 cm (2 inches) between them. Gently flatten each one with your palm or the back of a spoon.
Bake in the preheated oven for approximately 12–15 minutes. The exact baking time will depend on the thickness of the cookies and the type of oven you use.

Remove the tray from the oven and let the cookies rest on the baking sheet for 5–10 minutes.
Then carefully transfer them to a wire rack to cool completely. The cookies may seem soft when they first come out of the oven, but they will become noticeably crispier as they cool.
For the best results, keep these tips in mind:
Use fresh, preferably roasted pistachios.
Do not melt the butter excessively.
Avoid overworking the dough.
Always chill the dough before baking.
Preheat the oven thoroughly before putting the cookies inside.
Leave enough space between the cookies on the baking tray.
Transfer the cookies to a wire rack after baking so they can cool properly.
