According to SAEDNEWS, food drying in the refrigerator is usually caused by moisture gradually leaving the surface of the food. Cold air inside the refrigerator has relatively low humidity, while the circulation system continuously moves air around stored items. When food is left uncovered or loosely wrapped, its moisture can slowly evaporate, causing the surface to become hard, dry or less appealing.
Refrigerator temperatures slow down evaporation compared with room temperature, but they do not completely stop it. Air movement inside the appliance can carry moisture away from exposed foods. Items such as cooked vegetables, bread, rice and cut fruits may therefore become noticeably drier when they are stored without adequate protection.
Packaging plays an important role in preserving moisture. Food kept in an open container or wrapped loosely has more contact with circulating air. Using airtight containers or well-sealed food wraps creates a barrier that reduces moisture loss. Dividing food into suitable portions before storage can also make it easier to seal each portion properly.

Foods with a high moisture content or delicate textures can show signs of drying more quickly. Cut fruits and vegetables, cooked grains and prepared meals may develop a dry surface when stored for several days. Exposed surfaces lose moisture first, which is why food can sometimes look dry on top while remaining moist underneath.
To reduce refrigerator drying, place foods in tightly closed containers and cover exposed surfaces carefully. Avoid leaving prepared meals uncovered for long periods, and store foods in containers that fit their portions rather than leaving large amounts of empty space. Checking stored food regularly and consuming older items sooner can also help maintain better texture and freshness.
