Making croissant dough at home takes some time, but the final result is well worth the effort.
Start by combining the yeast, sugar, and lukewarm milk. Leave the mixture in a warm place for about 10 minutes, allowing the yeast to activate.
Meanwhile, sift the flour and salt into a large bowl. Add the activated yeast mixture, egg, vegetable oil, and softened butter. Knead the ingredients by hand or with a mixer until the dough becomes smooth and soft.
If the dough is too sticky, add a small amount of flour. If it feels too dry, gradually add a little more lukewarm milk. Knead for about 10 minutes until the dough is soft and elastic.
Place the dough in a lightly greased bowl and cover it with a clean kitchen towel or plastic wrap. Let it rest in a warm place for 1–2 hours, or until it has doubled in size.
Tip: If you are short on time, you can use store-bought puff pastry. However, homemade dough gives these croissants a particularly fresh aroma and delicate texture.

While the dough is resting, prepare the filling.
Wash the dates, remove their skins if necessary, and take out the pits. If you are using dry dates, soak them in warm water for a few minutes to soften them.
Place the dates in a suitable pan and add the chopped walnuts, cinnamon, rose water, and water. Cook over low heat, stirring frequently, until the dates soften and the mixture becomes smooth and paste-like.
Once most of the liquid has evaporated, add the butter and continue stirring until the filling becomes smooth and glossy.
Let the mixture cool slightly, then transfer it to a bowl. If the filling is too loose, add a little breadcrumbs or flour to give it a thicker consistency.
Once the dough has rested and doubled in size, place it on a lightly floured surface. Knead it gently to release excess air.
Divide the dough into several small portions. Roll each portion into a circle about ½ cm thick.
Cut each circle into 8 equal sections, just as you would cut a pizza, creating evenly sized triangles.
Place a few spoonfuls of the date filling on the wide end of each triangle. Avoid adding too much filling, as it may spill out while rolling and affect the shape of the croissants.
Starting from the wide end, roll each triangle toward the tip. Gently press the tip to secure the dough.
Arrange the shaped croissants with enough space between them on a baking tray lined with parchment paper. Cover them with a clean towel and let them rest for another 20–30 minutes. This second rise allows the croissants to puff up and develop a lighter texture.
For a beautiful golden and glossy finish, prepare the egg wash by combining the egg yolk, turmeric, vegetable oil, and brewed saffron in a small bowl. Mix until smooth.
Using a pastry brush, gently coat the surface of each croissant.
