How to Make Delicious Afghan Potato Bolani

Accoridng to Saednews, Afghan Potato Bolani, also known as Bolani Kachalo, is a popular and delicious traditional Afghan dish. It is an easy and quick meal that can be served for lunch or dinner.

Ingredients for the Dough

  • 3½ cups flour

  • 2 tablespoons salt

  • 2 tablespoons oil

  • 1¼ cups water

Ingredients for the Filling

  • 3 potatoes

  • 1 cup chopped cilantro

  • 2 cups sliced onions

  • 1 teaspoon salt

  • 2 tablespoons olive oil

  • ½ cup green peppers

  • 1 teaspoon black pepper

How to Make Afghan Potato Bolani

Step 1

Place the flour, salt, and oil in a suitable bowl. Mix the ingredients together well.

Step 2

Gradually add the water to the dough while mixing. The dough should not be overly sticky. If necessary, you can add a little more water.

Step 3

Knead the prepared dough thoroughly. Cover the bowl with plastic wrap and let the dough rest in the refrigerator for about 20 to 30 minutes.

Step 4

Wash the potatoes and boil them in a pot until tender. Once cooked, peel them and lightly mash them in a suitable bowl.

Step 5

Heat two tablespoons of oil in a suitable frying pan. Wash and finely chop the green peppers, then add them to the pan. Sauté for about one minute until slightly softened.

Wash and slice the onions into thin rings. Add the sliced onions to the peppers and sauté them together.

Add the washed and finely chopped cilantro to the pan.

Add the mashed potatoes to the pan and remove it from the heat. Add the salt, black pepper, and any remaining seasonings, then mix everything well.

Remove the dough from the bowl and divide it into eight equal portions. Take one piece and keep the remaining pieces covered.

Lightly flour a work surface and place the dough on it. Roll it into a circular shape approximately 20 cm in diameter.

Place some of the potato filling on one half of the dough, leaving about 1 cm of space around the edge. Fold the other half of the dough over the filling and press the edges together. Use a fork to seal them firmly.

Heat oil in a frying pan and fry both sides of the Bolani until golden and crisp.
