In this article, we will explain how to make Kromboloni and highlight some important tips for preparing it successfully.
To make Kromboloni, you will need:
All-purpose flour: 500 g
Sugar: 60 g
Milk: 100 ml
Water: 160 ml
Yeast: 10 g
Honey: 10 g
Butter: 50 g
Butter for laminating the dough: 250 g

First, combine the flour, sugar, and salt in a large bowl. Add the milk, water, honey, and yeast to the mixture. Knead the dough by hand or with an electric mixer until it becomes smooth and soft. It is important to knead the dough thoroughly at this stage so that it develops good elasticity.
Gradually add the butter to the dough and knead again until all the ingredients are well incorporated. Once the dough becomes smooth, place it in a lightly greased bowl and cover it with plastic wrap. Let it rest for 20 minutes. This resting period helps the dough develop and rise properly.
After the initial resting period, place the dough on a lightly floured surface and roll it into a rectangle measuring approximately 20 × 30 cm. Cover it with foil and refrigerate for 2 hours. Chilling the dough helps improve its structure and texture.
While the dough is resting, shape the butter into a 20 × 20 cm square and place it in the refrigerator to keep it cold. Keeping the butter chilled is important for creating distinct layers in the pastry.
After 2 hours, remove the dough from the refrigerator and roll it into a rectangle. Place the butter square in the center of the dough, then fold the edges over the butter until it is completely enclosed.
Using a rolling pin, gently roll the dough into a rectangle measuring approximately 20 × 60 cm.
Fold both sides of the dough inward, then fold the dough over itself. Cover it again with plastic wrap and refrigerate for 1 hour. This folding process helps create the flaky, layered texture that makes the pastry distinctive.
After the dough has rested, remove it from the refrigerator and gently roll it into a rectangle measuring approximately 30 × 45 cm. Trim the edges to create an even shape, then cut the dough into strips about 4 cm wide.
These strips will be used to form the pastries into rolls.

Line a baking tray with parchment paper and arrange the dough rolls on it. Cover the rolls with another sheet of parchment paper and place a weight on top. This helps the pastries maintain their shape while baking.
Place the tray in a preheated oven at 180°C (350°F) and bake for approximately 15–20 minutes.
After this time, remove the rolls from the oven and turn them over so that the other side can bake for another 15 minutes.
At this stage, you can prepare the filling for the rolls. Depending on your preference, the filling can include chocolate, dried fruit, or other ingredients of your choice.
