These days, we are loving fresh fruits. They are especially enjoyable in spring and summer when there is a wide variety available, making them a healthy and refreshing snack.
This fruit pizza is one of our favorite recipes and often appears on our breakfast table. It is very easy to make and can be ready in about 30 minutes.
The crust is made with simple ingredients that you likely already have at home: oats, oat flour (ground oats), coconut oil, honey, cinnamon, and vanilla. Simply bake it for 10 minutes, let it cool, and then spread an even layer of vanilla Greek yogurt on top.
You can use any combination of fruits you have available in your refrigerator.
For this version, I used:
• Blackberries
• Raspberries
• Mandarin oranges
• Kiwi
• Strawberries
• Blueberries
I think mango, grapes, pineapple, or even a few banana slices would also be delicious choices!

Rolled oats: 2 cups
All-purpose flour: 1 cup
Ground cinnamon: ½ teaspoon
Vanilla extract: 1 teaspoon
Salt: ⅛ teaspoon
Honey: ⅔ cup
Coconut oil (at room temperature): 3 tablespoons
Vanilla Greek yogurt (preferably full-fat or thick yogurt): 1 ¼ cups
Honey: 2 tablespoons
Blackberries: ½ cup
Raspberries: ½ cup
Mandarin orange slices: ⅓ cup
Medium kiwi (peeled and sliced): 1
Strawberries (sliced): 2
Blueberries: ⅓ cup
Preheat the oven to 350°F (175°C). Grease a 10-inch springform pan and set aside.
In a large bowl, combine 2 cups of rolled oats, 1 cup of all-purpose flour, ½ teaspoon of cinnamon, 1 teaspoon of vanilla extract, and ⅛ teaspoon of salt. Add ⅔ cup of honey and 3 tablespoons of coconut oil, then mix until a smooth dough forms.
Spread the mixture into the prepared pan and press it firmly with a spatula or the bottom of a glass until even. Bake for 10 minutes. Remove from the oven and allow it to cool completely.
Mix 1 ¼ cups of vanilla Greek yogurt with 2 tablespoons of honey. Spread the yogurt mixture evenly over the cooled crust using a spatula.
Decorate with ½ cup of blackberries, ½ cup of raspberries, ⅓ cup of mandarin orange slices, 1 sliced kiwi, 2 sliced strawberries, and ⅓ cup of blueberries.
Serve immediately or refrigerate for up to 1 hour to chill and allow it to set before serving.
