According to Saednews, Bandari sausage sandwich is one of the most popular Iranian street-style sandwiches. It is especially known for its spicy flavor and has become widely enjoyed across Iran, similar to falafel and samosa-style fast foods.

Ingredients (Serves 3)

  • 500 g chopped cocktail sausages

  • 3 onions, sliced

  • 2 tablespoons tomato paste

  • Salt, as needed

  • Black pepper, as needed

  • Turmeric, as needed

Instructions

Step 1: Sauté the onions

Heat a little oil in a pan and sauté the sliced onions until they become soft and slightly golden. Traditionally, Bandari sausage is made with plenty of onions cut in larger slices, but you can slice them thinner if preferred.

Step 2: Add turmeric

Once the onions soften, add turmeric and stir well.

Step 3: Add sausages

Add the chopped sausages to the pan and sauté until they are lightly fried.

Step 4: Add spices

Season with salt, black pepper, and chili pepper. This dish is usually prepared spicy, but you can adjust the heat level to taste.

Step 5: Fry the tomato paste

In a separate small pan, fry the tomato paste with a little oil until its raw taste is removed and it becomes darker and aromatic. Be careful not to burn it.

Step 6: Combine ingredients

Mix the fried tomato paste with about half a cup of hot water, then add it to the sausage mixture. Stir and cook until the water evaporates and the mixture becomes slightly oily and well-cooked.

Final Step: Serve

Serve the Bandari sausage mixture in a sandwich bun or baguette. It is commonly enjoyed with pickles, sliced tomatoes, and your choice of sauce.

Optional Tips

  • Adding mushrooms, bell peppers, or pizza cheese can enhance the flavor.

  • A small amount of saffron or lemon juice can improve taste.

  • Adding potatoes is optional; traditional Bandari sausage does not include them. If used, they should be pre-cooked.

  • You can substitute tomato paste with fresh tomatoes or ketchup.

  • A touch of curry spice can make the flavor richer.
