Step-by-Step Preparation of Soft and Velvety Almond Mousse

Preparing most desserts is generally not very difficult; the key factor is the chilling time required for the dessert to set properly in the refrigerator. Now, we invite you to follow this simple step-by-step guide so that by tomorrow, when you open your fridge, you will have a cool and sweet almond mousse.


Step 1:

First, pour the milk into a suitable saucepan and place it over low heat. Gradually add almond powder while continuously stirring so that the milk and almond powder mix well. After stirring for a while, allow the milk to heat properly.


Step 2:

Break the eggs one by one into two separate containers to check freshness. First, crack each egg into the first container; if it is fresh and the yolk and white are not mixed, transfer it to the second container. Repeat this process for all four eggs.


Step 3:

Separate the yolks from the whites. You can use a clean plastic bottle for this. Place the bottle opening over the yolk so that it is sucked into the bottle, then transfer it to another container. Repeat until all yolks are separated without any egg white remaining.


Step 4:

Lightly whisk the egg yolks with a fork to break their structure. Gradually add sugar and then vanilla. Mix slightly, then use an electric mixer to combine everything well.


Step 5:

After 3 to 6 minutes of mixing, the texture will become light, fluffy, and elastic. Now you can combine the egg mixture with the milk mixture in two ways:

  • Either add the egg mixture into the milk and stir until the yolks cook gently.

  • Or add the milk into the egg mixture and place the bowl over a pot of boiling water (double boiler method) so the eggs cook with steam heat.


Step 6:

Proceed with the first method and continuously stir while the yolks are cooking. Meanwhile, dissolve gelatin powder in one cup of cold water. Since gelatin does not dissolve well in cold water, place it over a steaming pot (double boiler method) until fully dissolved.


Step 7:

Once the gelatin is fully dissolved and becomes a clear liquid, add it to the milk mixture and stir well. Then remove the pot from heat.


Step 8:

Whip the fresh cream using an electric mixer until it becomes smooth and slightly firm (about 5 minutes). If desired, you may add cocoa powder to make a chocolate-flavored version.


Step 9:

Add 2–3 tablespoons of the milk mixture to the whipped cream and mix well so it reaches a similar temperature. Then gradually add the remaining milk mixture and combine everything thoroughly using an electric mixer for 3–4 minutes.


Step 10:

Pour the prepared mousse mixture into desired molds. Place them in the freezer and allow them to set for about 24 hours.


Step 11:

Chop almonds into small pieces. After the mousse has fully set, remove it from the molds, place it in a serving dish, and decorate it with chopped almonds. You may also use fruits for additional decoration.
