🍚 Traditional Indian Kheer Recipe (Rice Pudding)

Kheer is one of the most loved and well-known Indian desserts. It is a sweet pudding made by simmering milk with ingredients like rice, vermicelli, lentils or sometimes fruits and vegetables. Sugar and flavorings such as cardamom, saffron, rose water or nuts are often added to give it a rich taste and aroma.

The most classic version is Rice Kheer. In this traditional dessert, basmati rice is slow-cooked in milk until the grains soften and the milk thickens.

🧾 Ingredients

  • 1/4 cup basmati rice

  • 1 liter full-fat milk

  • 1/2 cup sugar (adjust to taste)

  • 4–5 green cardamom pods (crushed)

  • 10–12 almonds (sliced)

  • 10–12 cashews (chopped)

  • 1 tbsp raisins

  • A few strands of saffron (optional, soaked in 1 tbsp warm milk)

  • 1 tsp rose water or kewra water (optional, for aroma)


👨‍🍳 Preparation

1. Wash and soak rice
Rinse the basmati rice thoroughly and soak it in water for 20–30 minutes. Drain before cooking.

2. Cook the milk
In a heavy-bottomed pan, bring the milk to a boil. Lower the heat and simmer.

3. Add rice
Add the soaked rice to the milk and cook on low flame, stirring frequently so it doesn’t stick to the bottom.

4. Simmer until creamy
Cook for 30–40 minutes until the rice breaks down and the mixture becomes thick and creamy.

5. Add dry fruits & flavoring
Add cardamom, almonds, cashews, raisins, and saffron. Stir well.

6. Sweeten it
Add sugar and mix until fully dissolved. Cook for another 5–10 minutes.

7. Finish
Add rose water (optional) and turn off the heat.


🍽️ Serving

Serve warm or chilled. Kheer tastes even better after resting as flavors deepen.
