Medium carrots: 2
Leeks: 2
Celery stalk: 1
Fresh cream: 200 g
Wheat flour: 1 cup
Chopped parsley: 2 tablespoons
Chicken broth or stock cubes: 3 cups
Salt and black pepper: as needed
Fresh lemon juice: as needed
To prepare this delicious soup, first chop the leeks and add them to a pot along with chopped celery, onions, and carrots.
Add chicken broth or three stock cubes dissolved in three cups of boiling water to the pot.
Turn on the heat and bring the mixture to a boil, then reduce the heat and let it simmer for about 40 minutes until the vegetables become soft and well cooked.
Next, add salt and black pepper.
Mix room-temperature cream with flour, then gradually add it to the soup while stirring continuously to ensure a smooth texture.
Let the soup simmer on low heat for another 10 minutes to remove the raw taste of the flour.
Finally, add chopped parsley and fresh lemon juice, and turn off the heat after 5 minutes.
Your delicious celery soup is now ready to serve. Enjoy!
Leeks often contain sand, so it is recommended to wash them thoroughly after chopping. Soak chopped leeks in cold water and drain them, repeating this process at least twice to ensure cleanliness.
Stock (chicken, meat, fish, or vegetable) is prepared by simmering bones with vegetables and selected spices. It is widely used in soups, sauces, stews, and many other dishes, significantly enhancing flavor. You can prepare stock at home or buy it ready-made from supermarkets. Note that stock usually contains salt, so adjust seasoning at the end of cooking. Instead of stock cubes, you may use two cups of chicken broth.
