Ingredient | Amount |
|---|---|
Chicken breast | 400 g |
Potatoes | 3 |
Bell pepper | 1 |
Green peas | ½ cup |
Corn | ½ cup |
Cheddar cheese | ½ cup |
Mozzarella cheese | 1 cup |
Tomato paste | 4 tablespoons |
Fresh lemon juice | 2 tablespoons |
Olive oil | 2 tablespoons |
Garlic powder and paprika | ½ tablespoon |
Mustard | 1 tablespoon |
Salt and pepper | As needed |

Wash and clean the chicken breast. Remove any bones and cut the chicken into medium-sized cubes.
Wash the potatoes thoroughly, peel them, and cut them into medium-sized cubes.
In a bowl, combine the tomato paste, olive oil, and mustard. Mix well until the ingredients are completely blended.
Add the garlic powder, paprika, salt, black pepper, and red pepper to the sauce and mix well. If desired, you can also add a little dried thyme. Set aside 1 tablespoon of the sauce for the chicken.

Place the potatoes in a Pyrex or ovenproof baking dish and toss them thoroughly with the sauce. Bake in a preheated oven at 200°C (392°F). After about 20 minutes, turn the potatoes over so they cook evenly. The potatoes should bake for approximately 1 hour in total, or until tender and lightly golden.
Place the cubed chicken in a suitable skillet and mix it with the tablespoon of sauce you set aside. Add a little oil and cook over medium heat, stirring occasionally, until the chicken changes color and is lightly cooked.
Wash the bell pepper, finely dice it, and add it to the chicken. Cook for a few minutes until slightly tender.
Add the cooked chicken and bell pepper to the baked potatoes and mix gently.
Add the green peas and corn to the casserole mixture and combine everything well.
Mix the cheddar and mozzarella cheeses, then spread them evenly over the casserole. Cover the baking dish with aluminum foil and return it to the oven until the cheese melts and the dish is fully heated through.
During the final few minutes, remove the foil and place the casserole back in the oven until the cheese becomes golden and lightly grilled on top.
You can customize this casserole with your favorite herbs, vegetables, and seasonings. Thyme, oregano, chili flakes, or additional vegetables can all be used according to your taste.
