Contrary to what many people believe, preparing Tahchin is actually quite simple and only requires a little skill, attention, and care to achieve the perfect result.
According to Saednews, Tahchin is a traditional Persian rice dish that comes in many varieties, including chicken tahchin, fish tahchin, and meat tahchin, which are among the more common versions. Other variations, such as bean rice tahchin, sour cherry rice tahchin, and pan kebab tahchin, are also prepared and are known for their delicious flavors.
This recipe explains how to prepare Sour Cherry Tahchin with Chicken, a flavorful and elegant dish that is especially suitable for gatherings and celebrations. Its beautiful appearance makes it a wonderful addition to a festive table. The most important aspect of making tahchin is ensuring that it holds its shape and does not fall apart. By following the techniques below, you can prepare a perfectly firm, delicious, and aromatic tahchin.
3 cups Iranian rice
4 eggs (3 egg yolks + 1 whole egg)
1 cup strained yogurt (Greek-style thick yogurt can be used)
3–4 tablespoons thick brewed saffron
2 chicken breasts, cut into cubes
1 large onion, finely diced
1 teaspoon turmeric
½ teaspoon black pepper
Salt, as needed
1⅓ cups pitted sour cherries + 4–5 tablespoons sugar
(or 1⅓ cups sour cherry jam)
½ cup vegetable oil for the tahchin mixture + 3 tablespoons for cooking the chicken
25 g butter
1 cup water
½ cup sliced pistachios
½ cup sliced almonds
Cream cheese, as needed, for decoration

For better texture, soak the rice with salt for at least 3 hours before cooking.
Fill a large pot about two-thirds full with water and bring it to a boil. Add salt. Drain the soaking water from the rice and add the rice to the boiling water.
Keep the heat medium-high and do not cover the pot. Allow the water to return to a boil.
Once boiling, gently stir the rice several times at intervals to separate the grains. Be careful not to break the rice.
The rice usually needs around 10–14 minutes to cook, depending on the type of rice. It is ready to drain when the grains are soft on the outside but still slightly firm in the center.
Drain the rice completely and rinse it with cold water to stop the cooking process and remove excess salt.
For tahchin, the rice should be slightly firmer than regular cooked rice because it will continue cooking after being mixed with yogurt and eggs.
Place the cubed chicken breast in a pan with diced onion, 2–3 tablespoons of vegetable oil, turmeric, salt, and black pepper.
Cook over medium heat while stirring regularly until the chicken absorbs the flavors.
After about 20 minutes, add 1 cup of water and allow half of the liquid to evaporate. The chicken filling is ready when it becomes tender and flavorful.
In a bowl, combine strained yogurt, eggs, salt, and brewed saffron. Mix well using an electric mixer.
Add the vegetable oil and butter mixture, then mix again.
Using both oil and butter gives tahchin a better texture. Pure oil can make the crust overly crispy.
Add two-thirds of the prepared rice (slightly warm) into the yogurt mixture and gently combine.
Avoid mixing very hot rice with yogurt because it can cause the yogurt to release water and make the tahchin soft. If the rice is too cold, it may lose its ability to bind together.
This portion will be used for the first and final layers.
Place the remaining one-third of the rice in a separate bowl.
Add the sour cherries and gradually mix in a small amount of cherry juice.
If using sour cherry jam, add only the cherries and avoid adding the syrup because it will make the dish excessively sweet.
Grease the bottom and sides of your baking dish with oil.
Spread half of the saffron rice mixture into the dish and gently flatten it with a spoon.
Arrange the chicken filling in the center, leaving some space around the edges. This prevents the chicken from falling out when slicing the tahchin.
Add the sour cherry rice layer over the chicken.
Finally, spread the remaining saffron rice mixture on top and smooth the surface.
Cooking Methods
Place a heat diffuser under the pot.
Reduce the heat to very low and cover the pot with a clean kitchen towel under the lid.
Cook for approximately 1 to 1½ hours until the tahchin develops a golden, crispy crust.
Cover the baking dish with aluminum foil and make several small holes in the foil using a fork.
Place it in the middle rack of an oven preheated to 180°C (350°F) for about 1 hour.
After cooking, remove the tahchin from the oven and let it rest at room temperature for 15 minutes before serving.
Decorate the tahchin with:
Sliced almonds
Pistachios
Sour cherries
Strained yogurt
For a more decorative presentation, mix strained yogurt with a small amount of cream cheese, place it in a piping bag, and create small decorative shapes on top of the tahchin. Garnish the yogurt decorations with pistachios, almonds, or sour cherries.
