How to Make Delicious Baghali Tahchin (Fava Bean Rice)

According to Saednews, Baghali Tahchin is a popular and elegant Iranian dish prepared with a variety of ingredients. Follow the step-by-step instructions below to learn how to make it.

Ingredients

  • 2 cups soaked rice

  • 3 tablespoons dried dill

  • 1/2 cup fava beans (baghali)

  • Butter and saffron, as needed

  • 2 pieces chicken

  • Salt, black pepper, turmeric, and cinnamon, as needed

Instructions

First, wash the rice and soak it in salted water, then set it aside. Wash the chicken pieces and place them in a bowl. Add spices, a little saffron, and chopped onion, then massage well and let them marinate for 1 hour.

Next, clean and wash the fava beans, or use frozen ones if preferred. Place the rice over heat and cook until the grains begin to soften. At this stage, add the fava beans and dill, and continue cooking until the rice becomes fully tender.

Then drain the rice. In the bottom of a pot, add butter, saffron, and oil. Arrange the marinated chicken pieces at the bottom, then layer the drained rice mixed with fava beans on top and smooth the surface. Optionally, sprinkle a little cinnamon to enhance aroma. Cover and let it steam on low heat for about 40 minutes until fully cooked and set.
