SAEDNEWS: Shami Pok is a traditional and delicious dish from Gilan, Iran, especially prepared during the month of Ramadan for iftar meals. It is made from a mixture of minced meat, rice, eggs, and aromatic spices, giving it a soft and pleasant taste.
According to Saednews family cooking service report, Shami Pook is prepared by soaking split peas, cooking meat with onions and spices, then blending everything with potatoes and eggs before frying.
Potatoes: 2 medium
Onion: 1 medium
Beef: 400 g
Split peas (lapeh): 200 g
Eggs: 2
Salt and black pepper: as needed
Turmeric and oil: as needed

Soak the split peas in water overnight to reduce bloating. Change the water a few times if possible to keep it clean.
Cut the onion into large slices and place it in a pot with the beef. Add black pepper, turmeric, and 2 cups of boiling water.
Bring the pot to a boil over high heat, then reduce heat and cook for about 45 minutes. Drain the soaked split peas and add them to the pot.
Peel and wash the potatoes, then add them to the pot. Cook everything together for another 45 minutes. Add salt during the last 5 minutes.
After everything is fully cooked, drain the contents. Separate the meat and mash it well until shredded and soft.
Grind or blend the cooked split peas and other ingredients. Mix everything with the shredded meat in a bowl and add eggs. Combine well.
Cover the bowl and refrigerate for 1 hour to let the mixture rest and firm up.
Heat oil in a pan. Take a portion of the mixture, shape it into a round patty (like a potato croquette), and make a hole in the center with your finger. Fry until golden.
If the patties break apart, whisk an egg white and brush it on both sides before frying to help them hold together.
Place fried patties on paper towels to remove excess oil. Serve hot with bread or rice.
Chopped parsley or cilantro adds freshness and enhances flavor while increasing nutritional value.
Turmeric gives a golden color, while black pepper and chili add warmth and depth. Garlic powder can also enhance aroma and taste.
