Grilled mashed eggplant: 1 tablespoon
Shallot powder: 1/4 teaspoon
Full-fat yogurt (preferably tangy): 4 tablespoons
Dried or fresh mint: a small amount for garnish
Salt: as needed
In a bowl, mix the grilled mashed eggplant with the full-fat yogurt. Then add the shallot powder and salt, and stir well until fully combined.
Place the prepared borani in the refrigerator so the flavors of eggplant and shallot blend thoroughly into the yogurt.
Before serving, garnish with a little mint on top.
