400 g ground chicken
3 eggs
1 medium onion
Vegetable oil, as needed
1 tablespoon breadcrumbs
Salt, black pepper, and thyme, as needed
To make the chicken shami more flavorful and suitable for serving on special occasions, you can add extra ingredients such as sesame seeds, parsley, and brewed saffron.
If you prefer a simpler and more economical version, you can include potatoes instead. In this case, remove 200 g of chicken and replace it with potatoes. The potatoes can be added either raw (grated) or boiled.
First, peel and wash the onion, then grate it finely and squeeze out its excess juice. Next, grind the chicken meat twice using a meat grinder and place it in a large bowl. Add the grated onion and mix well.
Break the eggs separately in a small bowl first to ensure they are fresh, then add them to the mixture. Season with salt, black pepper, and thyme, and mix thoroughly until the ingredients are fully combined and sticky.
Add one tablespoon of breadcrumbs and knead the mixture until it becomes firm and cohesive. If needed, you can add one more tablespoon of breadcrumbs.
Heat oil in a pan over low heat. Spread breadcrumbs on a plate and place it nearby. Take a portion of the mixture about the size of a falafel, shape it with your hands or a mold, coat it in breadcrumbs, and place it in the hot oil.
Fry both sides over low heat to ensure the patties cook through and turn golden. Once done, place them on paper towels to absorb excess oil. Finally, serve them on a dish, garnish with pickles and tomatoes, and enjoy with bread.
