How to Make Simple Khuzestani-Style Falafel with Excellent Flavor

According to the cooking section of the Saed News website, falafel is a simple and inexpensive Arab dish that has become popular around the world due to its delicious taste.

Falafel Ingredients

  • Chickpeas — 2 cups

  • Potato — 1 medium

  • Parsley — 1 small bunch

  • Onion — 1

  • Garlic — 4 cloves

  • Falafel spice mix — 1 teaspoon

  • Coriander powder & cumin — ½ teaspoon each

  • Paprika & curry powder — ½ teaspoon each

  • Coriander powder & red chili powder — ½ teaspoon each

  • Salt & black pepper — to taste

  • Turmeric & oil — as needed

Step 1
To make delicious and simple falafel, soak the chickpeas in a bowl of water overnight. If possible, change the water several times. This helps soften the chickpeas and reduces bloating.

Step 2
In this step, drain the chickpeas and grind them using a food processor or meat grinder. Peel the potatoes, onion, and garlic, then add them along with parsley to the grinder or processor. Blend the mixture coarsely.

Step 3
Be careful not to turn the mixture into a smooth puree. The falafel mixture should still have small pieces of chickpeas for texture. If you are using a meat grinder, it is better to grind the mixture twice so it does not become too smooth.

Transfer the mixture into a large bowl. If it releases water, add a small amount of chickpea flour and mix until the batter becomes cohesive. The mixture should not be too stiff.

Add falafel spices including coriander powder, cumin, paprika, curry powder, red pepper, salt, black pepper, and turmeric. Knead the mixture by hand for a few minutes so the spices are well combined.

Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour. This allows the flavors to blend together. After the resting time, remove it from the refrigerator.

Heat a deep pan and add enough oil so the falafels can float while frying. Dip the falafel mold in water to slightly wet it before use.

Fill the mold with falafel mixture using a spoon and smooth the surface. Then carefully drop it into hot oil. Fry over medium heat so the inside cooks properly.

Once one side is golden brown, flip the falafels and fry the other side. When done, place them on paper towels or a wire rack to remove excess oil. Serve hot with your preferred side dishes.
