Blini is considered one of the main symbols of the Maslenitsa festival, often referred to as the Slavic equivalent of Nowruz, celebrated in Russia, Ukraine, and Belarus. During this festival, people prepare homemade blini and share them with family and friends as a gesture of hospitality.

To prepare blini, thin crepes are first cooked in a pan, preferably a non-stick one, using simple ingredients such as eggs, milk, butter, flour, and salt. The recipe is quick and requires minimal ingredients, making it easy to prepare in a short time. No baking powder is traditionally used, since blini is not meant to be fluffy; however, it can be added if a softer, puffed texture is desired. The batter should be fairly thin to spread easily like a pancake. Blini is soft, delicate, and widely appreciated, often served even at breakfast tables.

  • 1/4 cup buckwheat flour

  • 1/4 cup all-purpose flour

  • 1/3 teaspoon baking powder

  • 3/4 cup milk

  • 1/3 teaspoon yeast

  • 1 egg (yolk and white separated)

  • 125 g butter


Instructions

  1. Sift buckwheat flour, all-purpose flour, and baking powder into a large bowl and mix well.

  2. In a separate bowl, combine milk and yeast, then add the egg yolk and mix.

  3. Gradually add the liquid mixture into the dry ingredients and stir until a smooth batter forms.

  4. Whisk the egg white separately until soft peaks form. Carefully fold it into the batter to keep it airy.

  5. Heat butter in a non-stick pan. Pour about one tablespoon of batter into the pan and spread it thinly.

  6. Cook until bubbles appear on the surface, then flip and cook the other side until golden.

  7. Fill or serve with desired toppings such as smoked salmon and cream cheese, or strawberries and whipped cream.


Blini with Smoked Salmon (Serving Option)

Ingredients

  • Dill (2 bunches)

  • 2 lemons

  • 200 g sour cream

  • 2 teaspoons butter

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 cup yogurt

  • 2 eggs

  • 1/2 teaspoon oil

  • 1 cup buckwheat flour

  • Arugula (to taste)

  • 400 g smoked salmon

  • Black pepper (to taste)

  • Onion (for garnish)


Preparation Method

Mix buckwheat flour, baking powder, and salt in a bowl. Add eggs, yogurt, and melted butter, then whisk until smooth. Add finely chopped dill and arugula.

Heat a non-stick pan over low heat, lightly grease it, and pour 2–3 tablespoons of batter. Spread evenly. Cook until bubbles form and edges turn golden, then flip and cook the other side.

For the sauce, mix sour cream with lemon juice, chopped dill, salt, and pepper.
