  • Brewed saffron: 4 tablespoons

  • Butter: 50 grams

  • Salt and black pepper: As needed

How to Prepare Restaurant-Style Chelo Kebab Barg

Chelo Kebab Barg is one of the most popular Iranian dishes, known for its exceptional flavor created by combining tender meat with aromatic seasonings.

Step 1

To prepare restaurant-style Barg Kebab, place the meat on a work surface. Using a meat mallet or the back of a knife, pound the meat thoroughly until it becomes completely flat. Make sure the thickness is even throughout the meat, reaching about half a centimeter.

Step 2

If the meat is too thick, divide it into two thinner pieces horizontally. After pounding the meat, cut it into suitable pieces. The ideal width for skewering Barg Kebab is about four fingers wide, although for homemade kebabs it can be slightly smaller.

Step 3

Once the meat has been cut and prepared, place it in a suitable bowl. Add vegetable oil, coarsely sliced onions, brewed saffron, and some salt and black pepper to the bowl.

Step 4

Mix the ingredients well so that the marinade covers all parts of the meat. Cover the bowl with plastic wrap and place it in the refrigerator for at least 8 hours to allow the meat to absorb the flavors.

Step 5

After the meat has been fully marinated, transfer it to the grilling area. Hold the meat firmly with your hand and carefully insert the skewer into it with gentle pressure. Continue this process until all the meat has been placed on the skewers.

Step 6

After skewering the meat, the edges may hang slightly, which is normal. Once exposed to heat, they will straighten out. Prepare the charcoal evenly and place the skewers on the grill.

Step 7

Turn the skewers continuously so the kebabs cook evenly on all sides. Near the end of cooking, brush the kebabs with a mixture of brewed saffron and melted butter. Once the kebabs are ready, serve them with bread or steamed rice.
