SAEDNEWS: Creamy Pumpkin Pasta with Parmesan and Garlic is a flavorful and aromatic dish made with pumpkin purée, milk, garlic, and Parmesan cheese.
According to Saednews, Creamy pumpkin pasta is a fragrant and delicious dish made with pumpkin purée, milk, garlic, and Parmesan cheese. The pumpkin’s gentle sweetness combines with nutmeg and the savory flavor of cheese to create a smooth, rich sauce that coats the pasta beautifully. This recipe explains how to make pumpkin pasta, with simple tips for adjusting the sauce’s consistency and balancing its flavors.
450 g pasta
2 cups pumpkin purée
1 cup milk
1 cup Parmesan cheese
4 garlic cloves
2 tablespoons chopped parsley
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon nutmeg

Fill a large pot with plenty of water and bring it to a boil over high heat. Add some salt, then add the pasta.
Cook according to the package instructions, usually for 8–10 minutes, until al dente. The pasta should be cooked through but still slightly firm when bitten, rather than overly soft.
Before draining, reserve about 1–1½ cups of pasta water. Then drain the pasta.
Place a large skillet over medium heat and warm the olive oil. Add the chopped parsley and minced garlic, and sauté for about one minute until fragrant.
Be careful not to let the garlic change color, as browned garlic can make the sauce taste bitter.
Add the pumpkin purée to the garlic, parsley, and olive oil mixture, stirring gently. Add the salt, black pepper, and nutmeg.
Let the mixture cook over low heat for 2–3 minutes, allowing the seasonings to blend into the sauce and release their aromas.
How to make pumpkin purée: Peel the pumpkin, remove the seeds, and cut it into small pieces. Steam or roast the pieces until completely tender. Blend or mash the pumpkin flesh until smooth. If the purée contains excess moisture, cook it a little longer to reduce the liquid. For the sauce, use a smooth, relatively thick purée.
Gradually pour the milk into the sauce while stirring continuously until the mixture becomes smooth and creamy.
Check the consistency of the sauce. If it is too thick, add a little of the reserved pasta water until it reaches your desired texture.
Add the cooked pasta to the skillet and toss gently until the sauce evenly coats every piece.
If necessary, add a little more reserved pasta water to adjust the consistency and help the sauce cling to the pasta.
Remove the skillet from the heat and add the grated Parmesan cheese. Stir gently until the cheese melts completely and the sauce reaches its final creamy consistency.
Serve the pumpkin pasta immediately to enjoy its freshest flavor and best texture.

Pumpkin pasta can be customized by choosing the right pasta shape, adjusting the sauce’s flavor, and adding complementary ingredients. These tips will help you preserve the pumpkin’s distinctive taste while adapting the dish to your preferences.
Choose a pasta shape that works well with the thickness of the sauce. Short pasta varieties such as penne and rigatoni are excellent choices because their tubular shapes and textured surfaces hold the sauce well. Fettuccine and linguine are ideal for those who prefer long, ribbon-shaped pasta.
Pumpkins with deep orange flesh, a relatively firm texture, and mild sweetness work particularly well in pasta sauces.
If you use ready-made pumpkin purée, check its moisture content, as watery purée can make the sauce too thin.
For a richer, creamier texture, use whole milk and freshly grated Parmesan cheese. These ingredients help create a velvety sauce with a deeper, more savory flavor.
