SAEDNEWS: In this article, we’ll show you how to make an easy and delicious pan-fried chicken koobideh kebab at home.
According to Saednews, Skillet chicken koobideh is a simple, healthy, and practical dish for everyday meals or entertaining. Using ground chicken or finely chopped chicken breast makes it lighter and lower in fat than traditional kebabs.
400 g (14 oz) ground chicken
2 onions
½ teaspoon saffron
8 tablespoons hot water
50 g (1.8 oz) butter
Lemon juice, as needed
Salt and pepper, to taste
Breadcrumbs, if needed

Grind the saffron in a mortar, then add 8 tablespoons of boiling water. Cover and let it steep for about 10 minutes. Set aside 4 tablespoons of the brewed saffron.
Meanwhile, melt the butter over low heat in a small saucepan. Mix it with the remaining 4 tablespoons of brewed saffron. This mixture will be used to brush over the kebab while it cooks, helping keep it moist and giving it a beautiful color.
Peel and wash the onions, then grate them finely or process them in a blender. Squeeze out the excess onion juice completely.
Add the onions to the ground chicken along with 4 tablespoons of brewed saffron, salt, and pepper.
Knead the mixture thoroughly until all the ingredients are well incorporated and you have a smooth, cohesive mixture. Wearing gloves can make this step easier.
Cover the mixture with plastic wrap and refrigerate for about 30 minutes. This resting period allows the flavors to blend and helps the kebab mixture hold together.
Lightly oil the bottom of a nonstick skillet with a brush. Place the chicken mixture in the pan and spread it evenly with your palm, making sure the thickness is consistent throughout.
Place the skillet over medium heat and cook until the excess moisture has evaporated and the kebab has begun to firm up.
Using a knife, cut the kebab lengthwise into strips.
Add some lemon juice to the saffron-butter mixture. Brush the top of the kebab generously with the mixture to prevent it from drying out and to give it a rich color.
Carefully turn the strips over and cook the other side until fully done. Brush this side with the saffron-butter mixture as well.

First, grate the onions and squeeze out all the excess liquid. Add the ground chicken, salt, pepper, and your preferred spices. Gently mix everything with your fingers, then cover and refrigerate for a short time.
Soak the wooden skewers in water for 10–15 minutes. Remove them from the water and press the chicken mixture around each skewer, leaving a small space near the tip.
Gently shape the meat with your fingers, forming an even cylindrical layer around the skewer. Repeat until all the mixture has been used.
Lightly oil a skillet and place it over medium heat. Arrange the chicken skewers in the pan and cook, turning them occasionally, until all sides are golden brown and the chicken is thoroughly cooked.
Tip: Always soak wooden skewers in water for 10–15 minutes before using them. This helps prevent them from burning during cooking.
