According to Saednews, Simple tahchin is one of the most delicious and easy versions of tahchin. It can be prepared without an oven and cooked on the stovetop in a pot. Tahchin can be made with chicken, meat, or in a vegetarian style. It is perfect for parties and makes an excellent crispy rice base (tahdig). Today, we will teach you how to prepare chicken breast tahchin with corn and green peas.
1 medium chicken
4 cups rice
1/2 cup green peas
1/2 cup corn
1 potato, cut into cubes
1 onion
1/2 cup mushrooms
Thyme, as needed
Saffron, as needed
Pistachio slivers, as needed
Salt and pepper, as needed
Almond slivers, as needed

First, soak the rice with salt. Bring a pot of water to a boil, add the rice, and cook until slightly softened. Then drain it and set aside.
In a pan, sauté the chopped onion. Add the chicken pieces and fry until lightly browned. Let it cook in its own juices until tender.
Add the cubed potatoes and sauté lightly. Then add corn and green peas. Separately sauté the mushrooms with a little oil and add them to the pan. Continue stirring.
Season with salt, pepper, and thyme.
Preheat the oven. Lightly grease a baking dish. Mix some of the cooked rice with saffron and press it firmly into the bottom of the dish.
Add a layer of the prepared chicken and vegetable mixture, then another layer of rice. Continue layering until all ingredients are used.
Cover the dish with aluminum foil and make a few small holes in it. Bake for about 15–20 minutes.
