Rice: 3 cups
Chicken fillets: 4 pieces
Mushrooms: 250 g
Onion: 1 medium
Thick saffron infusion: as needed
Lemon juice: 2 tablespoons
Barberries: ½ cup
Salt, black pepper, thyme, paprika: as needed
Oil: as needed

Finely chop the onion and sauté it in a pan with a little oil until golden. Add the sliced chicken fillets. Season with salt, turmeric, black pepper, thyme, and paprika. Stir and cook for about 5 minutes.
Add sliced mushrooms and lemon juice. Sauté for about 10 minutes, then cover the pan and reduce the heat so the chicken and mushrooms cook through. Finally, add the washed barberries and a bit of saffron infusion. Turn off the heat.
Parboil the rice so it remains slightly firm. Layer rice and the chicken-mushroom mixture in a pot alternately (about three layers). Drizzle saffron infusion over the top. Cover and steam the rice for about 45 minutes.
Before serving, gently mix the rice so the ingredients are evenly distributed. Enjoy your meal.
