According to Saednews, Morasa Polo (literally “Jeweled Rice”) is one of the most beautiful and delicious Iranian festive dishes. It is known for its colorful appearance and rich taste, making it a popular choice for formal gatherings and special occasions.

Below is a step-by-step guide to preparing this dish, along with important tips to enhance its flavor.

Instructions

Step 1: Preparing the Rice

Wash the rice thoroughly and soak it in salted water for a few hours. Then drain it.

Step 2: Parboiling the Rice

Bring a pot of water to a boil. Add the soaked rice and cook until it is half-cooked. Drain and set aside.

Step 3: Cooking the Chicken

Cut the chicken breasts into strips or cubes. Finely chop the onions and sauté them in oil until golden. Add the chicken pieces and fry until they change color. Season with salt, pepper, and turmeric. Add saffron if desired. Add a little water and let it cook until tender.

Step 4: Preparing the “Jewels” Mixture

Soak raisins and drain them. Wash the barberries. Soak almonds and pistachios in water. Slice the carrots into thin strips.

In a pan, melt butter and sauté raisins until softened. Add barberries and stir briefly. Then add almonds, pistachios, and carrots and sauté gently.

Step 5: Preparing the Tahdig (Crispy Base)

Line the bottom of a pot with either lavash bread or sliced potatoes to create a crispy crust.

Step 6: Layering and Cooking

Heat a little oil in a pot. Add a layer of parboiled rice, then add a layer of the prepared jeweled mixture. Repeat layering if needed. Pour saffron evenly over the rice.

Cover the pot and cook over low heat until the rice is fully steamed.

Step 7: Serving and Decoration

Transfer the rice to a serving dish and decorate it with the remaining jeweled mixture in a decorative pattern.


Tips for Better Flavor

  • You can replace chicken with ground meat if preferred.

  • Optional additions include orange peel, dried lime peel, or walnuts.
