Wash the rice thoroughly and soak it in salted water for a few hours. Then drain it.
Bring a pot of water to a boil. Add the soaked rice and cook until it is half-cooked. Drain and set aside.
Cut the chicken breasts into strips or cubes. Finely chop the onions and sauté them in oil until golden. Add the chicken pieces and fry until they change color. Season with salt, pepper, and turmeric. Add saffron if desired. Add a little water and let it cook until tender.
Soak raisins and drain them. Wash the barberries. Soak almonds and pistachios in water. Slice the carrots into thin strips.
In a pan, melt butter and sauté raisins until softened. Add barberries and stir briefly. Then add almonds, pistachios, and carrots and sauté gently.
Line the bottom of a pot with either lavash bread or sliced potatoes to create a crispy crust.
Heat a little oil in a pot. Add a layer of parboiled rice, then add a layer of the prepared jeweled mixture. Repeat layering if needed. Pour saffron evenly over the rice.
Cover the pot and cook over low heat until the rice is fully steamed.
Transfer the rice to a serving dish and decorate it with the remaining jeweled mixture in a decorative pattern.
You can replace chicken with ground meat if preferred.
