According to Saednews, Apricot Swiss roll is one of the most popular homemade desserts, loved for its delightful aroma, soft and fluffy sponge, and perfectly balanced combination of fruit and cream. It is an ideal treat for parties, family gatherings, and afternoon tea. In this article, we’ll guide you through the steps to make this delicious dessert easily at home.
Ripe apricots: 300 g, preferably soft and sweet
Eggs: 3, at room temperature
Sugar: 100 g, for the sponge cake
All-purpose flour: 100 g, sifted
Vanilla extract: A small pinch or a few drops, for flavor
Whipping cream: 200 ml, chilled
Powdered sugar: 3 tablespoons, for the cream
Orange juice: 100 ml, for cooking the apricots
Extra powdered sugar: As needed, for decoration

Follow these detailed steps to prepare a soft, flavorful apricot Swiss roll with homemade apricot jam and cream.
Wash the apricots, remove the pits, and cut the fruit into small pieces.
Place the apricot pieces and orange juice in a small saucepan.
Cook over low heat for about 15–20 minutes, until the apricots soften and most of the liquid evaporates.
Mash the softened apricots with the back of a spoon until the mixture reaches a thick, jam-like consistency.
Allow the apricot jam to cool completely before using it.
Prepare the oven and baking tray: Preheat the oven to 180°C (350°F). Line a 30 × 40 cm baking tray with parchment paper and lightly grease it.
Beat the eggs and sugar: Place the eggs and sugar in a large bowl. Beat with an electric mixer for 5–7 minutes, until the mixture becomes pale, thick, fluffy, and airy. When you lift the beaters, the batter should fall in ribbons that remain visible on the surface for a few moments.
Add the vanilla and flour: Mix in the vanilla. Add the sifted flour in three batches, gently folding it in with a spatula using circular, bottom-to-top movements. Avoid overmixing so the batter retains its airiness.
Bake the sponge: Pour the batter into the prepared tray and spread it evenly with a spatula. Bake for 10–12 minutes, until the surface is lightly golden and no longer sticky to the touch.
This step is essential for preventing the sponge from cracking when you assemble the Swiss roll.
Immediately after removing the sponge from the oven, lay a clean cotton kitchen towel on your work surface.
Turn the sponge out onto the towel, keeping the parchment paper attached.
Carefully peel away the parchment paper.
Using the towel to help you, roll the sponge up from one short end into a spiral.
Leave the rolled sponge wrapped in the towel until it has cooled completely, approximately 30 minutes.

In a chilled bowl, beat the cold whipping cream with the powdered sugar until thick and stiff.
Add the cooled apricot jam to the whipped cream and gently fold until evenly combined.
Carefully unroll the cooled sponge cake.
Spread the apricot cream mixture evenly over the entire surface, leaving a 2 cm border around the edges.
Roll the sponge up again, this time more firmly, to create the finished Swiss roll.
Wrap the roll in parchment paper or plastic wrap and refrigerate for at least 2 hours, until firm and set.
Before serving, dust the Swiss roll with powdered sugar and cut it into neat slices.
Use room-temperature eggs: Eggs at room temperature whip more easily and help create a lighter, fluffier sponge.
Sift the flour: Sifting introduces air into the flour and helps produce a delicate, soft cake.
Avoid overbaking: Baking the sponge for too long will dry it out and cause it to crack when rolled.
Let the sponge cool completely: Make sure the sponge is completely cool before adding the cream to prevent the filling from melting.
Use a sharp, serrated knife: For clean, even slices, use a sharp serrated knife and wipe the blade clean between cuts.
Enjoy this homemade apricot Swiss roll with its light sponge, fruity apricot filling, and smooth whipped cream—a delightful dessert for any occasion.
